Baked Meatball Subs
Serves: sandwiches for 4

  • ½ c. bread crumbs
  • ½ c. milk
  • 1 lb. ground beef
  • 2 cloves garlic, minced
  • 1 egg
  • 1 T. onion, minced (optional)
  • Chimichurri
  • 8 mini pretzel rolls
  1. Preheat your oven to 400 degrees.
  2. In a large bowl, mix together the bread crumbs and milk. Allow to sit for 10 minutes, until the breadcrumbs have absorbed all the milk.
  3. To the breadcrumbs and milk mix, add the ground beef, minced garlic, egg, and onion. Mix together with your hands until fully combined. Drop loosely-formed 1-tablespoon balls onto a lightly greased cookie sheet. You should make around 24 meatballs.
  4. Bake for 15 minutes, or until the meatballs are cooked through.
  5. While the meatballs are baking, lightly toast the split pretzel rolls until warm.
  6. Serve meatballs on rolls with chimichurri for garnish.
