I’m heading to the beach this weekend for my family reunion, so my future includes biscuits and gravy, shrimp boil, fajitas, and a lot of Whataburger. #Mmmmm.
I love fruit desserts and I have a dinner party on Monday, so I’m thinking I’ll try out either a lemon cake with raspberries (omg, yes, are you kidding me?) or a peach pie or a homemade panna cotta with peaches. Those are all probably too ambitious for a weeknight dinner party, so I’m keeping this summer fruit galette in mind, with peaches or strawberries or currants or whatever looks delicious at the market.
I think that Tracey Shutterbean and I could be best friends. Anyway, she made a Thai Corn Coconut Soup this week that looks amazinggggg. She suggests throwing it in the freezer, which means it can join my freezer gazpacho in my summer lunch line-up.
Last week we had Indian food for dinner, and I’ve been thinkin’ about it ever since. I usually like those kind of flavors when it gets chillier outside, so I’m bookmarking this lamb kofta curry for the first cool weekend in New York. Until then, I’m going to keep enjoying my fresh, cool summer dinners like coconut chile ceviche and green pea salad with halloumi and summer green bean salad.
