Happy Friday, guys! The Boyfriend and I are Providence-bound this weekend to visit his sister and check out the hoppin’ restaurant scene. The last time we went, we waddled out of dinner at Bacaro and skipped the crazy college frat partiez to watch New Girl at the hotel and go to bed early. (Yup, I’m still 42 at heart — what of it?) Anyway, we’re probably going to do our fair share of waddling this weekend, so I should be planning on a healthy week when we get back to NYC. Guess what? That’s so not happening!
Instead, I’m lusting over these grilled-maple peach ice cream splits. Literally everything Deb makes is magic, amirite? Let’s be real though, I’m much more likely to treat myself to chocolate-dipped potato chips (though very unlikely to let them cool before digging in). Can you imagine yourself standing over the counter with potato chips and melted chocolate? Yeah, me too.
Sticking with things that are healthy and easy and reasonable weeknight endeavors in my hot ass summer kitchen, I’m thinkin’ homemade bagels. Or pan-fried flatbread. Or some homemade focaccia. Carbs on carbs on carbs, people, just the way I like it. Not into carbs? How about a summertime version of cheese and corn casserole?
But for real, I am lookin’ at some nice and easy lemon-rosemary chicken and maybe some spicy tortilla soup for next week. And I wouldn’t say no to lemon basil shrimp risotto. I also wouldn’t say no to green onion and pea risotto. I’m actually struggling to think of a risotto I would say no to… Maybe I’ll find something in Providence. I’ll keep you all posted!
