Guys, this week I had to go to court in a suit. I started sweating on the subway platform and stopped, oh, I don’t know, about halfway through our conference with the judge. It’s hot up in here. So I’m thinking about salads, which would usually be boring for me, but peeps are making some delicious-looking and unexpected combos: peaches and cheese (> peaches and cream); nectarine caprese ; and strawberries and kale all caught my eye. (I just realized that those all have fruit. Apparently I’m still into fruit in savory dishes?) And then there’s always a good ol’ steak salad and a new twist on a bean salad.
Also, I didn’t make a flag cake for Fourth of July. I just wasn’t feelin’ it. But now I’m bookmarking every fruit dessert I see — and whatever I’m going to do, it’s going to be easy. None of that rolling-out-pie-crust baloney. We’re talking crumbles and cobblers and buckles. Next up at leightogreato bakery is definitely something with peaches, or blueberries, or (omg) cherries.
I’ve been really into homemade lemonade lately! While a glass full of fresh-squeezed lemon juice, a little sugar and water with a lot of ice is pretty perfect, I can see myself gettin’ fancy as shit with something fruity and minty over the weekend…
And, guys, there is no way I could possibly make these. The corn right now is too perfect with just a little lime, salt and butter. But homemade fried corn croquettes? Like, for real, take me there (just do it in your own kitchen, mine gets too damn hot).
Happy weekend! Love and sunshine and eternal summer,
